15 Minute Pork Tenderloin Stir-Fry

So I had no time (or motivation) to cook dinner, but I had a pork tenderloin that was going to go bad if I didn't use it. I didn't have an hour-and-a-half to marinade and cook this thing, so I decided to improvise! YUM!

PORK TENDERLOIN STIR-FRY

1 1/2 lbs Pork Tenderloin, cut into 1/2" medallions
1 sweet red pepper cut into strips
1 vidalia/sweet yellow onion cut into strips
2 tbsp olive oil
2 tbsp apple cider vinegar
1 1/2 tbsp Worcestershire sauce
1 1/2 tbsp honey
1 1/2 tbsp spicy brown mustard


Cook it all up in a skillet over medium-high heat until the peppers and onions are soft and the pork is cooked through. It makes your whole house smell AWESOME!

Serve over brown or white rice, or even on a sub roll!


I'm sure you could use beef successfully in the dish. Minced garlic and red pepper flakes would certainly jazz it up too.
